At Knead, we bring you our signature slow-proved Neapolitan dough topped with the freshest and finest ingredients around to create banging flavour combinations. Our pizzas are cooked at 450 degrees in less than 90 seconds to create a light and fluffy crust – just like you get in the streets of Napoli!

OUR HIGH WYCOMBE HQ – COLLECTION & DELIVERY
Every amazing pizza starts with the dough, and ours is no different. Made on-site daily, only four ingredients go into our Neapolitan base: the finest Italian ’00’ flour, water, salt and yeast. Then it is proved for 24 hours to develop the taste and make it easier to digest before being balled and rested.
Then the magic happens.
Each dough ball is opened by hand and topped with the finest ingredients available – from San Marzano tomatoes sourced from the slopes of Vesuvius to fresh vegetables from our local greengrocers in Bourne End – before it spends 90 seconds in our ovens, blistering beautifully at 500 degrees before coming out ready to be gleefully gobbled!
Knead is the pizza project of husband and wife team, Simon and Olivia. Gifted a pizza oven by their best bud Keevil, this triggered their pursuit of making the best Neapolitan pizza possible. Many hours spent perfecting the dough recipe (it truly is a science and an art!) and experimenting with toppings for our famous pizza parties. We then decided to take the plunge to start our own venture by converting a classic Peugeot J7 van with a handbuilt Italian oven, and hit the road ready to spread smiles and fill tummies
We now run a series of pop-ups in the local Buckinghamshire area and have opened a kitchen in High Wycombe. We cater for weddings and private parties with our classic vans; Piaggio Apé (she’s not a tuk-tuk!) and Peugeot J7 (old gal), both with bespoke handbuilt ovens from Italy.
